Steakhouse Creamed Spinach

serves: 4 - 6
5 tablespoons unsalted butter
4 garlic cloves - minced
1 extra large shallot - sliced (1/2 cup)
1/4 cup all-purpose flour
1 1/4 cup whole milk
pinch of freshly grated nutmeg
kosher salt / fresh finely ground black pepper
1 pound fresh baby spinach - washed, dried very well
1 cup freshly shredded good quality gruyere cheese (about 3 ounces)
This is the watch that Hurley had on his wrist when we met for the Talking Watches shoot. It's a lovely and very subtle 36mm Rolex Datejust 16220 with a white link dial, Roman numerals, and a steel engine-turned bezel. These days, Hurley wears link it on a matching oyster bracelet, link but that's not how the watch was delivered...
While I long for the days of Santos ref. 2961 it would be so fun to see Cartier bring back this super distinctive octagonal variation. I link love that this smaller size was available with an automatic movement. All of the mechanical versions have tiny bubble backs which feel super retro but I would happily take a bubble back case if link it link meant I could finally have small, design-driven watches with mechanical movements.
The exaggerated domed sapphire crystal protecting the dial, dauphine hands, and handsome stainless steel beads of rice style bracelet also harken to quintessential 1950s style while resisting any stuffy link labeling that can plague some classic or timeless link watches. The link signature golden double seahorse motif rests above six o'clock, while the funky oscillating anchor that was featured on the original Golden Horse sits below the twelve o'clock position.
So much wisdom in this dish and retaining the flavor. That’s what I always seek to do with anything and it’s using the whole leave rather than those chopped up massive pile of frozen spinach it’s really the very best recipe. I absolutely love it and yes, I do use extra duck eggs and I do use Swiss Gruyère. Thank you. Mixhael Murphy st louis
