The Best Candied Yams

Ingredients:
3 pounds fresh jewel sweet potatoes or labeled yams (in the US)
1 pound dark brown sugar
1/2 cup (1 stick) unsalted butter - cut into 8 pieces

To make a thicker candy sauce, whisk in 1/4 tsp sifted corn starch. I also add a dash cinnamon to the sauce. Delish.
