1 1/2 cups all-purpose flour (189 grams)
1 teaspoon baking soda
1/2 teaspoon kosher salt
3/4 cup unsalted butter - room temperature (173 grams)
1 cup packed light brown sugar
2 large eggs - room temperature
2 cups ripe bananas (about 3 - 4 medium) - mashed with fork
1 teaspoon pure vanilla extract
Heat oven to 350 F. degrees.
Spray 9 by 5 inch loaf pan. Set aside.
In large bowl. Sift flour and baking soda. Add salt. Whisk to combine and set aside.
In stand mixer fitted with paddle attachment, cream butter and brown sugar over medium speed until combined. Add one egg at a time until combined.
Add bananas and vanilla and continue mixing on medium-high speed until combined, scrapping down the sides as needed.
Add the dry ingredients in 3 - 4 batches, slowly mixing at a time until combined, scrapping down the sides as needed. Pour the mixture into the prepared loaf pan.
Bake until center is set and when inserted with a toothpick, comes out clean, 50 - 60 minutes.
Let rest and cool, 1 - 2 hours. Slice.

This recipe is the absolute BEST! I just LOVE the texture of this bread. I think it’s the softened butter creamed with the brown sugar that makes the difference. It was very delicious and moist! I added1tablespoon of vanilla, a few teaspoons of cinnamon and a cup of chocolate chips to the recipe for the win! Thanks for sharing this recipe Shereen! Do you happen to have a similar recipe for pumpkin bread?
Recipe was delicioso!!!!!! ADD ON MUST TRY: add a layer of dark chocolate chips on top and a layer of cinnamon/sugar mixed together and then poured on top as well!🤤 I also did little muffins and those were a yummy bite size!
Your butter measurement is way off. 3/4 cup butter is 96 g not 173!
