for the burgers:

1 1/2 pounds boneless New York Strip steaks - cut into cubes

4 slices Monterey Jack cheese

4 brioche hamburger buns

1 large ripe tomato - sliced

romaine lettuce

2 - 3 poblano chiles

1 medium white onion - sliced thick

canola oil or avocado oil

kosher salt / finely ground black pepper

for the Poblano Aioli:

1 garlic clove - finely grated

2 tablespoons freshly squeezed lemon juice

1 cup mayonnaise

3/4 cup roughly chopped cilantro leaves

[*Cook the burgers 2 minutes. Flip. 1 - 2 minutes on the other side, for medium doneness]
